Recipe: Mozzarella Stuffed Pork Chops, Sweet Potatos and Fresh Green Beans


Here's a good pork chop recipe with green beans and sweet potato as sides:

What You'll Need:


  • 2 Thick Pork Chops
  • 1 C. Mozzarella Cheese (Preferably from a ball, grate yourself)
  • 2 Tbs. Fresh Chopped Parsley
  • A Generous Handful of Fresh Green Beans
  • 1 Sliced Roma Tomato
  • 1 Tbs. Garlic & Onion Seasoning (The Gourmet Collection) save 1/4 for beans)
  • 1/2 tsp. Salt (1/4 tsp. for mozzarella mix, 1/4 tsp. for chop seasoning)
  • 2 Tbs. Olive Oil for chops / 1 tsp. for green beans (Extra Virgin)
  • Half of 1 chopped roasted red pepper chopped (Canned @ TJ Maxx)
  • 1/2 C - 1 C of white wine (Pinot Grigio Preferred)

While still raw, cut slits in your pork chops for filling later, make a one-inch incision on the chop and use this to make the inside slits wider. Season pork chops with a dry rub of salt and Gourmet Collection Garlic & Onion seasoning. In a Stainless Steel pan, add olive oil and sear chops for about ten minutes, 5 on each side until each side boasts a nice browning. Remove chops, deglaze pan with white wine and add chopped garlic and chopped roasted red pepper, cook for 3 minutes. While your sauce is cooking, stuff your pork chops with mozzarella cheese, parsley, salt, and pepper. Return chops to pan. 

Place sliced tomatoes on each chop and place the pan in the oven at 400 degrees and cook for another 30-45 minutes depending on your oven and how thick your chops are. After 30 minutes of cooking, in boiling water, place 1 large sweet potato cut into 8 pieces. Let boil for 15-20 minutes or until done and soft.

 When the time is up on your chops, place them in the broiler for 5 minutes to crisp the meat. 
Tip, if using the broiler, do not keep the chops in the stainless steel pan, as these pans are not meant to be used at over 500 degrees of heat, which the broiler is. I recommend placing chops in a broiler-safe dish).

Five minutes before your dish is ready, season your green beans with a pinch of salt and Gourmet Collection Garlic & Onion seasoning; place fresh green beans in pan and sear at med. heat in olive oil and cook for 5 minutes. 

When your meal is done, serve pork chops on a bed of green beans and sweet potatoes on the side. 

This is a great, easy recipe and I wish I would have taken a pic when I made it, but if you follow the directions, it will come out great for your too.
