Hearty Fish Salad - Quick Recipes for Moms

The biggest issue revolving a mother's time is not having enough quick recipes. By the time prep is done, the cooking is done, and everyone has eaten, you have literally lost your whole night. Forget about down time, you've got to bathe, put them to sleep and handle everything else next.

That's what we are here for, we will periodically offer you some easy, time-saving recipes like the one below!



Hearty Fish Salad




Ingredients: (See brand and type recommendations below)


  1. 5 Fish Sticks Per Adult
  2. 2 Fish Stick Per Child
  3. Lettuce Greens (we find that spring greens work best with this recipe)
  4. 1 Small Tomato
  5. Handful of Crunchy Croutons 
  6. Handful of Shredded Cheese


If frozen, bake your fish sticks according to your package instructions. If you will be breading and cooking your own fish sticks, you can either fry them or bake them according to your preference. If choosing a frozen alternative, find one that offers nutritious value for your family.

While your fish is baking, slice your tomatoes into thin wedges, wash your greens and dry with a salad spinner or paper towel. Set aside your croutons and cheese, and remove your fish from the oven when the timer rings.

When your fish is done, bring together your salad in a large bowl or serve individually, building it starting with your greens. Layer your tomatoes on top of your greens and dress your salad with the dressing of your choice. (For best results, do not dress your salad with your croutons and fish already as a topping. This will cause your fish to break and your croutons to become soggy.)

Once your greens and tomatoes are dressed, cut your fish into 4-5 pieces each, add your fish, croutons and cheese to your dressed salad and serve.


This recipe, while a simple salad, is very hearty, as fish provides a load of healthy protein for your family and your croutons will serve as your filling carbs.

Recommendations 

  • Fish- We recommend using Gordon's Fisherman or SeaPak; these brands offer healthy frozen alternatives within a good price range and can be found in almost any grocery store.
  • Lettuce- Boston Lettuce or Spring Greens are a good choice for this salad
  • Croutons- Marzetti or Cardini's croutons are the crunchiest we have tested. These croutons will stand up against salad dressing, remaining crisp throughout your entire mealtime. 
  • Cheese- Sargento cheese is our preferred family brand, it offers quality cheeses made from natural ingredients and has great, rich flavor. 
  • Tomatoes- Campari tomatoes are small and round; they are packaged in larger volumes, 8-12 per package. This makes it easier to cook and grab only what you need at a time, instead of ruining a whole large tomato only to use half. You will have plenty left over for later meals, and they make great bite sized wedges in salads.
